Banana bars
- 150g unsalted butter
- 110g brown sugar
- 60ml honey
- 350g rolled oats
- 2 handfuls of dried cranberries
- 100g hazelnuts
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 2 small bananas, mashed
Method:
- Preheat oven to 180°C and grease a slice tray with butter.
- Put the butter, sugar and honey in a large saucepan and melt over low heat.
- Remove from heat and stir in oats, hazelnuts, cinnamon, baking powder and bananas.
- Stir until well combined.
- Spoon into prepared tray and smooth the surface.
- Bake for 15-20 minutes or until golden brown.
- Cool in the pan, then transfer to a large chopping board to cut into squares.
