Banana bars

banana barsIngredients:

  • 150g unsalted butter
  • 110g brown sugar
  • 60ml honey
  • 350g rolled oats
  • 2 handfuls of dried cranberries
  • 100g hazelnuts
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2 small bananas, mashed

Method:

  1. Preheat oven to 180°C and grease a slice tray with butter.
  2. Put the butter, sugar and honey in a large saucepan and melt over low heat.
  3. Remove from heat and stir in oats, hazelnuts, cinnamon, baking powder and bananas.
  4. Stir until well combined.
  5. Spoon into prepared tray and smooth the surface.
  6. Bake for 15-20 minutes or until golden brown.
  7. Cool in the pan, then transfer to a large chopping board to cut into squares.
